150dq of beef, 1/4 onion, 1 bowl of flour, half a bowl of water, a little salt, pepper, soy sauce, cooking wine, sesame oil, and a few tablespoons of water. Instructions: 1. Add a little salt to the flour and water to make a smooth dough and let it rest for 30 minutes. 2. Chop the beef, add salt, pepper, soy sauce, cooking wine, sesame oil, mix well and marinate for 10 minutes.

3. Chop the onion into small pieces. 4. After heating the oil, add the hot pepper and a little chopped onion first, sauté them until fragrant, then pour in the minced beef and spread them out, then pour in the remaining chopped onion and stir-fry together, add some salt, and turn off the heat when the onion becomes soft. This is the filling for the beef dumplings. 5. Divide the dough that has been proofed into several small pieces, put each piece on the chopping board and roll it into a thin round dough, put the fried filling in the middle, then fold the dough in half and pinch the top together. 6. After heating the oil in the pan, put the pot stickers into the pan one by one and fry them slowly over low heat. When the dough on the bottom of the pot stickers starts to turn slightly yellow, add a few tablespoons of water to the edge of the pan, then cover the pot and simmer until the water is almost dry, then add some more water. Repeat this two or three times, and finally dry the water. Fry the three sides of the pot stickers until they turn yellow and they are ready to be served.

Is it better to use an iron pot or an aluminum pot for potstickers?

It’s better to use an iron pan.

because:

1. Aluminum is a low-toxic metal element. Although it will not cause acute poisoning, if you consume foods with high aluminum content for a long time, it will interfere with people's thinking, consciousness and memory functions, manifesting as memory loss, decreased intelligence, and in severe cases, dementia.

2. If the aluminum pot is dry-burned for too long, the bottom will leak.

When an iron spatula comes into contact with an aluminum pan during high-temperature cooking, aluminum components will be released, so it is better to use an iron pan.
