How to make spicy beef ribs

1. Soak the beef ribs in clean water for 2 hours, changing the water several times in the middle to filter out the blood.

2. Add half a pot of water to the 121 casserole and boil over high heat. Add beef ribs, 2 spoons of cooking wine, 2 spoons of light soy sauce, half a spoon of dark soy sauce, and simmer on low heat for about 1 hour.

3.Put 212 beef ribs into boiling water and blanch for 4-5 minutes, then remove and rinse with clean water.

4. Turn off the heat when you can poke the beef through with chopsticks.

5. Rinse the star anise, cinnamon, peppercorns, bay leaves and dried chilies with clean water. Set aside the ginger slices and garlic cloves.

6. Set aside 1 tablespoon of Pixian bean paste.

7. Heat the pan, pour in the auxiliary ingredients in step 3 and fry until the moisture is dry, then add vegetable oil and stir-fry the auxiliary ingredients over low heat until fragrant.

8. Add Pixian bean paste and stir-fry over medium heat until red oil comes out.

9. Pour the stewed beef ribs with the soup and stir-fry evenly.

10. Add the washed dried tofu. Bring to a boil over high heat, add half a spoonful of brown sugar, and simmer over low heat until most of the soup is dried up (about 40 minutes).

11. Pour 1 tablespoon of balsamic vinegar along the edge of the pot before removing from heat. Are you drooling?
