Ingredients: 100g pork hind leg

How to cook pork hind leg

1. Clean the pork hind legs, cut them into two large pieces, and cut them in the middle to make them easier to cook.

2. Pour water into the pot and bring to a boil. Add the pork hind leg and cook until the foam appears, then remove from the pot.

3. Add half a pot of water to the casserole, add dried red pepper, garlic, ginger, star anise, bay leaves and green onions and bring to a boil.

4. Add the pork hind leg and simmer over high heat for half an hour, then simmer over low heat until the pork can be pierced with chopsticks. (Don't stew it for too long, or the meat will be too soft and difficult to slice.)

Accessories: 1 scallion, 4 grams of ginger, 2 large spices

10 peppercorns 2 cloves 10g soy sauce

20g dark soy sauce 4 slices of hawthorn 1 piece of cinnamon

10g cooking wine 2 pieces of rock sugar 7g salt

1. Ingredients: Pork leg bones (blanched in water, put in cold water, add cooking wine, green onion, ginger to remove the fishy smell, squeeze out the blood foam, remove and rinse with cold water), rock sugar, green onion, ginger, hawthorn slices, peppercorns, cloves, cinnamon, star anise

2. Put the pork leg bones into the pressure cooker, add water just enough to cover the pork, add ginger and scallion segments

3. Add various dry seasonings

4. Add light soy sauce, dark soy sauce and cooking wine

5. After the water boils, cover the pot and wait for the exhaust valve on the pot to release steam, then turn to medium-low heat and press for 20 minutes

6. When the time is up, turn off the heat and wait for the pressure cooker to drop in pressure and temperature before taking out the pork leg bones.

7. Tear into small pieces by hand and put them on a plate. Make the sauce: mix soy sauce, minced garlic and sesame oil.

Cooking Tips

Set the braising time of the pressure cooker according to your preference. The longer the time, the more tender the pork will be. The amount of seasoning can also be increased or decreased according to your taste.
