Cooking Guide: Homemade Noodles

1. Homemade Dandan Noodles

① Materials

Noodles, lettuce, pork, dandan noodle seasoning

②Method

1. Cook the noodles first and put them on a plate

2. Dice the lettuce and pork

3. Add cooking oil to the wok. When the oil is hot, add the diced pork and stir-fry until fragrant. Then add the dandan noodle seasoning. After frying until fragrant, add a little water and simmer for a while. Then add the diced lettuce and stir-fry for a few times.

4. Pour the fried ingredients on the noodles.

③Tips

The noodles used are Ajisen Ramen. It takes about 2 and a half minutes to cook a handful of noodles. The noodles are quite chewy. It is recommended to add some salt to the water when cooking the noodles. After cooking, serve them on a plate with a little noodle soup. This way the noodles taste better.

Don't choose completely lean diced meat. The best ones are those with a little fat, as they will be more fragrant when fried.

Dandan noodle seasoning is available in supermarkets and online. If you can't eat spicy food, half a bag is enough, but you should add a little soy sauce or salt for seasoning.

The purpose of stewing the meat is to make it more flavorful, and the water should not be dried up. This way the noodles will have soup in them and taste more delicious.

2. Home-cooked Noodles

① Materials

Appropriate amount of fresh stretched noodles (or wide noodles), 30 grams of kelp shreds, 100 grams of pork (sliced), 1 piece of Knorr Soup Pack (pork bone soup flavor), and 500 ml of water.

②Method

Wash the kelp shreds, blanch the pork slices in boiling water until cooked, cook the wide noodles and drain.

Put two bowls of water (500 ml) in the pot, add a pork bone flavor soup base after boiling, add noodles, meat slices and kelp shreds, add chopped dried chili and pepper powder after boiling over high heat, then cook over medium heat for 2 minutes, sprinkle with shredded green onions after serving.

③Tips

Thick soup base is made by mixing a small piece of soup stock (32 grams) into water (usually about 750 ml) to make a delicious soup. The soup is then infiltrated with fresh ingredients. The ingredients absorb the rich soup, and the soup is also blended with the fragrance of the ingredients, becoming indistinguishable from each other and making it unforgettable for a long time.
