How to make tomato baked eggs

Office workers are usually too busy with work to take care of themselves, so they may choose to eat out, which can easily have a negative impact on their health over time. In fact, many dishes are very simple, such as baked eggs with tomatoes, which are very suitable for making at home after get off work.

1. Prepare cherry tomatoes, onions, eggs and seasonings. Dice the bell pepper and peel and chop the onion and set aside. Chop garlic into fine pieces.

2. Wash the cherry tomatoes, blanch them in boiling water, and then peel them.

3. Pour oil into a non-stick pan and heat over medium heat until it is 40% hot. Add diced bell pepper, onion, and garlic and sauté until onion becomes translucent.

4. Then add tomato sauce and half a cup of water, turn up the heat, cover and cook until the soup is slightly thick.

5. Add the cherry tomatoes and press lightly to release the juice.

6. Make three circles among the ingredients, crack the eggs into them one by one, sprinkle with salt, basil and black pepper, cover and simmer on medium-low heat until the eggs are set. I like it to be browned for a shorter time, and I like it to be fully cooked and simmered for a while longer.

7. Finally, sprinkle a little chopped cheese and simmer until melted.

8. In fact, you can eat it right after the pot is served. Here it is served in a bowl and garnished with mint for the photo. The thick tomato sauce here is also good with baguette.
