How to make cheese raisin toast

1. Medium dough: 160g high-gluten flour, 2g instant yeast powder, 1 egg yolk (18-20g), 80g water

2.1C unsalted butter 10g, raisins 50g

3.2B Main dough: 40g high-gluten flour, 20g fine sugar, 1/4 teaspoon salt, 10g milk powder, 10g cheese powder, 20g water

4.12D cheese paste: 75g cream cheese, 20g powdered sugar, 20g egg yolk, 10g low-gluten flour

5.21 Mix all the ingredients for the medium dough, stir into dough, and ferment for 90 minutes.

6.1 Basic fermentation until it doubles in size (about an hour later).

7.2 Mix the ingredients in step 5 with ingredient B, stir until smooth (20 minutes), add unsalted butter, stir until it becomes a stretchable dough (20 minutes), add raisins and stir evenly. (When adding raisins, you can take the dough out of the bread bucket and knead it with your hands to make it smooth. Do not expose the raisins outside.)

8. Take out the dough, roll it into a ball and let it relax for 10 minutes. Knead it into a rectangle about 20 cm long.

9. Turn the reverse side up and roll it up.

10. Place the bread in a toast mould with the front side facing up and place it in a warm and humid place for final fermentation.

11. While the dough is fermenting, you can make the cheese paste: soften the cream cheese over hot water, add powdered sugar and egg yolk, mix well, add low-gluten flour and mix well.

12. Let the dough rise until 90% full.

13. Spread the cheese paste evenly on the surface and sprinkle with almond slices.

14. Put it in the preheated oven, 190 degrees, upper and lower heat, for 35 minutes. (Depending on your oven).
