1. Prepare the main ingredient: pork leg.

2. Prepare the ingredients: water chestnuts, green onions, and ginger.

3. Peel the water chestnuts and cut into small dices, and chop the green onion and ginger into fine pieces.

4. Add 1 tablespoon of sweet potato flour to 5 tablespoons of water, mix well and set aside.

5. Chop the fat and lean meat into dices respectively, and set the fat aside for later use.

6. First chop the lean meat into coarse minced meat.

7. Add diced fat.

8. Chop the meat into finer minced meat. (Don’t make it too mushy, keep it granular so that the lion’s head is crispy)

9. Add diced water chestnuts and chopped green onion and ginger.

10. Chop lightly. (Don’t chop it for too long, it’s mainly for mixing. If you chop the water chestnuts completely, there will be no water chestnut particles in the lion’s head, and it will not be so crispy.)

11. Put the chopped meat into a larger bowl, add the above seasonings, put on disposable gloves, add the water starch made from the sweet potato flour prepared earlier in portions, and mix the minced meat evenly. (It only takes about 2 or 3 minutes, no need to stir)

12. Put an appropriate amount of minced meat in the palm of your left hand, and use a kitchen knife in your right hand to scrape it repeatedly until it becomes a round lion's head shape. (This step is a bit difficult and requires skilled techniques. I have seen the chefs and my father at home do this since I was a child, so I learned it this way. Now I am proficient in it. If you don’t know this method, you can use an iron spoon, hold it in your right hand, and use your left hand to scrape it repeatedly to make a round shape. The iron spoon is the kind that is usually used to feed children, because this kind of spoon is round in the middle, and the ceramic soup spoon we usually use for soup has a flat bottom, so it is not suitable)

13. Make all the lion heads in turn. I made 2 plates.

14. Steam it until done. (Pour cold water into the pot, turn to medium heat and steam for about 5 minutes after the water boils. The picture shows that it has been steamed. You can see that there is a lot of soup in the plate. This is because water starch was added during seasoning)

15. Take out the steamed lion head and place it on a plate. You can decorate it slightly according to your imagination.

16. Pour the soup in the plate into the pot, add a little water starch and thicken it into a thin sauce. (A thin starch is fine, don’t make it too thick)

17. Pour the sauce evenly on the decorated plate.
