1. Wash the chicken feet, remove the nails, put them into a pot with cold water, add two slices of ginger, a bay leaf, and a little salt and boil.

2. While cooking the chicken feet, prepare the auxiliary materials

3. After the chicken feet are boiled, the meat will bloom a little. Take them out, rinse them with cold water, and drain them.

4. Cut the drained chicken feet in half to make them more flavorful when cooked.

5. Turn on the fire, add oil to the pot, heat it to 50%, add bay leaves, ginger slices, garlic, and stir-fry the chicken feet after the aroma comes out.

6. Stir-fry until the chicken feet are dry, add spices, continue to stir-fry, then add bean paste, salt, chicken essence, red wine, and soy sauce

7. After the aroma comes out, pour in beer to submerge the chicken feet and bring to a boil over high heat.

8. Pour the boiled chicken feet into a stew pot, add sauerkraut, and simmer over low heat until cooked (the degree of cooking depends on personal taste, and you can add green and red peppers for garnish when it is almost done).
