6. Fry the pig's trotters on low heat for a while until they change color.

7. Then add the white wine and mix well. I didn’t add cooking wine because I like the aroma of white wine.

8. Pour in light soy sauce and dark soy sauce and mix well

9. Pour in rice vinegar

10. Finally, add star anise, cinnamon, rock sugar and ginger slices (I added this ginger twice, the first time I cut it into shreds and added a little before taking it out of the pot, the second time was this step, I added three or four slices), and finally pour in clean water to cover all the ingredients;

11. Bring to a boil over high heat, then turn to low heat and cook for about 90 minutes until the water is absorbed.
