Stir-fried shrimp with peas
How to make stir-fried shrimp with peas, with 10 steps (pictured). Prepare a serving of fresh, live shrimp.

Method
- 01
Step 1
Prepare a serving of fresh prawns

- 02
Step 2
Peel and debone the shrimp, pat them dry on kitchen paper, then place them in a bowl and add cooking wine, white pepper powder, salt, and cornstarch. Mix well and marinate for about 20 minutes.

- 03
Step 3
Prepare frozen peas and blanch them in advance.

- 04
Step 4
Be sure to keep the shrimp shells and heads after peeling. Heat oil in a pot, add ginger, then add the shrimp heads and shells and stir-fry until fragrant. Add boiling water and cook for about two to three minutes.

- 05
Step 5
Once the shrimp broth turns a deep reddish color, it's ready to be served and set aside (this shrimp broth is the essence of the entire dish).

- 06
Step 6
Heat oil in a pan and fry the shrimp until browned.

- 07
Step 7
Pour in the shrimp broth, add the green peas, and bring to a boil for another minute or two. Do not cover the pot (otherwise the peas won't turn bright green).

- 08
Step 8
Once the broth has thickened, add pepper and salt to taste, then turn off the heat!
