Step 1
First, wash and cut the ribs into pieces and place them in a bowl. Separate the egg whites from the eggs. Pour corn oil, egg whites, cornstarch, and a spoonful of soy sauce into the bowl and mix well with the ribs. PS: If you're not in a hurry, you can marinate them the night before. If you're in a hurry, prepare them in advance and marinate for about 20 minutes.

- 02
Step 2
Prepare the side ingredients when the ribs are almost marinated.

- 03
Step 3
Set up a pot and heat the oil.

- 04
Step 4
Once the oil is hot, pour in the white sugar. (P.S.: The picture below shows the difference between immediately after adding the sugar and a few seconds later. Keep stirring in a circular motion with the spatula to prevent burning.) Once a lot of bubbles appear on the surface, add the marinated ribs and stir-fry together.

- 05
Step 5
Stir-fry the ribs a few times to caramelize them with sugar, then pour in the cooking wine and continue stir-frying. At this point, the color isn't very dark yet.

- 06
Step 6
Add the light soy sauce, dark soy sauce, and oyster sauce in that order, and stir-fry a few times.

- 07
Step 7
Add Sichuan peppercorns, bay leaves, star anise, and cardamom, and stir-fry evenly.

- 08
Step 8
Pour in water, making sure it covers the ribs, and bring to a boil over high heat.

- 09
Step 9
Prepare a pressure cooker. First, add peanuts, ginger slices, and dried chili peppers, then add all the pork ribs. Cover and bring to a boil over high heat! (P.S. Don't just add the ribs; add broth too!) [After a few minutes, the pressure cooker will start hissing. After a few more hissing sounds, reduce the heat and cook for another 15 minutes or so. However, this may vary depending on the pressure cooker; every cooker has its own quirks!]

Step 10
After cooking, wait for the pressure cooker to release steam, then open the lid, add the final seasoning, and it's ready to be plated!
