Step 1
Rinse the soybeans with water first, then soak them in water for about ten minutes (until the soybean skins become wrinkled). Drain the water and set aside. Mince the pork and set aside. (This is my first time posting, please forgive any shortcomings.)

- 02
Step 2
Dry-fry soybeans over low heat until fragrant (similar to dry-frying peanuts).

- 03
Step 3
Pour the roasted soybeans into a prepared clay pot, add water (or broth) to soak them. (The water level should be higher than the soybeans.)

- 04
Step 4
Heat oil in a pot and stir-fry the minced meat until the oil is rendered. Add light soy sauce and sauté until fragrant. Then add ginger and an appropriate amount of water (or broth) and bring to a boil. Pour the meat and broth into a clay pot, place it on the stove and bring to a boil over high heat. Add salt, white sugar, and chili powder, then reduce the heat to low and simmer until the broth is almost gone.

Step 5
The fragrant and tender braised soybeans are ready! I could eat two more bowls of rice with this spicy and delicious dish.
