Potatoes and eggplants in sauce

   Eggplant cut into strips

   Slice the potatoes, chop the scallions, and mince the garlic.

   Heat oil in a pan, add potato slices and stir-fry until cooked. Set aside on a plate.

   Add some more oil, then add the eggplant and stir-fry until cooked.

   To make the sauce: soy sauce, oyster sauce, water, salt, and sugar.

   Add the potato slices to the pot and pour in the sauce.
