Method
- 01
Step 1
Prepare fresh front trotters (I'll explain how to choose front trotters later), soak them in clean water for a while, and then wash them thoroughly.

- 02
Step 2
Put the washed pig's trotters into a pot of cold water, add cooking wine, bring to a boil and blanch.

- 03
Step 3
Skim off the foam after boiling, turn off the heat, take out the pig's trotters, and rinse them.

- 04
Step 4
Prepare scallions, ginger, star anise, cinnamon, and dried chili peppers.

- 05
Step 5
Use an appropriate amount of rock sugar, not too much, for caramelizing.

- 06
Step 6
Add a little oil to the pot, then add rock sugar to caramelize.

- 07
Step 7
Stir-fry until the rock sugar melts and turns light brown.

- 08
Step 8
Sauté all the spices until fragrant.

- 09
Step 9
Pour in an appropriate amount of water and bring to a boil (use more water if using a regular pot, less if using a pressure cooker), and add light soy sauce, dark soy sauce, and oyster sauce for seasoning and color.

- 10
Step 10
Place the blanched pig's trotters into the inner pot of an electric pressure cooker.

- 11
Step 11
Turn off the heat after the seasoning water has boiled.

- 12
Step 12
Pour into the pig's trotter pot

- 13
Step 13
Cover the pot and select the tendon stew setting, or 25 minutes.

- 14
Step 14
When the time is up, remove the pig's trotters and put them back in the pot. Pour in some of the broth and bring to a boil to reduce the sauce.

- 15
Step 15
Reduce the sauce until thickened, then turn off the heat. The braised pork trotters are ready.

- 16
Step 16
It's delicious whether served hot or cold.
