First, cut the cucumber into chunks or slices, sprinkle with salt, and marinate in a container for two to three hours.

Step 2
After pickling, pour out the cucumber water and start washing the pickled cucumbers with clean water. If you can tolerate it being too salty, you can skip washing them. Wash the cucumbers several times.

- 03
Step 3
Place a heavy object on top of the container holding the cucumbers. Start squeezing out the water from the cucumbers.

- 04
Step 4
After pressing 12 24 , most of the water in the cucumbers will have been squeezed out. Place them in a pickling container and set aside.

Step 5
Heat a pot, pour in soy sauce (light soy sauce is best, dark soy sauce is too dark), add two tablespoons of white vinegar, star anise, and Sichuan peppercorns. Bring the soy sauce to a boil over high heat, then turn off the heat and add ginger and garlic slices. Let it cool and set aside.

- 06
Step 6
Cut the green and red bell peppers into chunks and place them on top of the pickled cucumber.

- 07
Step 7
Pour in the cooled soy sauce mixture, cover the container, and refrigerate in hot weather. In cooler weather, you don't need to refrigerate it; you can leave it in the kitchen. Marinate for three to four hours, and then you can enjoy delicious pickled cucumbers!
