Stir-fried wood ear mushrooms with pork
This recipe for stir-fried wood ear mushrooms with pork includes 10 steps. Wash the chili peppers, remove the stems, and slice them into rings. Mince the ginger and garlic.

Method
- 01
Step 1
Wash the chili peppers, remove the stems, and slice them into rings. Mince the ginger and garlic.

- 02
Step 2
Slice the pork thinly (I used pork shoulder, but you can use lean meat if you prefer). Marinate the pork with a little light soy sauce, a little dark soy sauce, a little sugar, cornstarch, and cooking wine for 15 minutes.

- 03
Step 3
Boil some water in a pot, then add shredded wood ear mushrooms and cook for one minute. After one minute, remove the shredded wood ear mushrooms and set them aside.

- 04
Step 4
Heat some oil in a pan, add the marinated meat slices and stir-fry until they change color, then remove from the pan.

- 05
Step 5
Then, in a separate pot, heat oil to about 60% of its maximum temperature, add a spoonful of chopped chili peppers and stir-fry (use a little more oil than usual for stir-frying).

- 06
Step 6
After stir-frying for a few seconds, immediately add minced ginger and garlic and stir-fry again.

- 07
Step 7
Add chili peppers

- 08
Step 8
After the chili peppers release their aroma and spiciness, add the shredded wood ear mushrooms and stir-fry, then add a little salt (the chopped chili peppers are already salty, so don't add too much salt).

- 09
Step 9
After stir-frying for a while, add the previously stir-fried meat slices and stir-fry again. Add a little light soy sauce and a tiny bit of water (just a few drops of light soy sauce and water are enough). Taste it and adjust the saltiness as needed. If it's not salty enough, you can add a little salt.

- 10
Step 10
Then, before taking it off the heat, add a little chicken bouillon powder and serve.
