Yam slices with wood ear fungus
Here's a step 3 step recipe for braised yam slices with wood ear mushrooms, complete with pictures. Peel the yam and slice it thinly. I used a vegetable slicer to slice it thinly, so please excuse my poor knife skills. Rinse the yam thoroughly to remove any sticky liquid.

Step 1
Peel the yam and slice it thinly. I used a vegetable slicer to slice it thinly, so please excuse my poor knife skills. Rinse it thoroughly to remove as much of the sticky juice as possible.

Step 2
Soak dried wood ear mushrooms one day in advance, wash them clean and drain them before use.

Step 3
Heat a generous amount of oil, then add the yam slices and stir-fry until they change color and lose their translucency. Add the wood ear mushrooms and stir-fry for a few seconds. Add seasonings: one teaspoon each of sugar, salt, and chicken bouillon. Pour in 1/4 small bowl of water; this thickens the sauce because the yam is sticky. When the sauce is almost reduced, add the scallions and stir a few times. Done!
