Step 2
Main ingredients.

Step 3
Cut the scallions into sections, cut the radish into 3 slices about 1 cm thick, and cut the rest into cubes about 4 or 5 cm in size. Slice the ginger and wash the fresh orange peel (you can use dried tangerine peel or hawthorn instead of fresh orange peel).

- 04
Step 4
Rinse the lamb leg with warm water to clean its surface, add enough water and 2 slices of ginger.

- 05
Step 5
Pour in the cooking wine.

- 06
Step 6
Bring to a boil over high heat and cook for 5 minutes to remove as much blood as possible from the lamb. (Remember not to cover the pot during the entire process.)

- 07
Step 7
Remove the mutton from the water and rinse it thoroughly with warm water. Also clean the pot and add enough water.

- 08
Step 8
Add scallion segments, orange peel, radish slices, and the remaining ginger slices.

- 09
Step 9
The fire boiled.

- 10
Step 10
Cover and simmer over medium-low heat for 2 hours.

- 11
Step 11
While the stew is simmering, boil another pot of water. Once the water boils, add diced radish and blanch for 2 minutes to remove any unpleasant odor.

- 12
Step 12
Remove them from the water and drain them for later use.

- 13
Step 13
The lamb was cooked in about 2 hours; it was tender enough to be easily pierced with chopsticks. (I personally prefer my lamb cooked until quite soft. If you prefer it less tender, you can shorten the cooking time.)

- 14
Step 14
Remove and discard the radish slices and scallion segments from the pot.

- 15
Step 15
Remove the lamb leg and cut the meat into your desired size.

- 16
Step 16
Put the chopped meat back into the stew pot (because there are few people in my family and we can't finish that much soup at once, so I made a separate pot. Otherwise, if the radish is put into the big soup pot, it will be a waste if we can't finish it in one meal).

- 17
Step 17
Add the appropriate amount of radish and the original broth, and add goji berries (if you are worried that the goji berries will become mushy and affect the appearance, you can add them when the radish is almost cooked).

- 18
Step 18
After about 20 30 , the radish will be cooked. Add a little salt (not too much, just a little bit, as you can also add dipping sauce according to your own taste).

- 19
Step 19
Below is a dipping sauce I personally like: light soy sauce, balsamic vinegar, salt, cilantro, chopped chili peppers, and minced garlic. For your reference.
