mung bean cake
A step-by-step guide to making mung bean cakes, with 12 steps. Prepare the ingredients, soaking the mung beans in water overnight.

Method
- 01
Step 1
Prepare the ingredients, and soak the mung beans in water overnight.

- 02
Step 2
Soaked mung beans can be easily skinned by rubbing them with your hands. Rinse and rub repeatedly to remove the skins. (If you prefer, you can buy peeled mung beans directly.)

- 03
Step 3
Peel the mung beans and steam them for about 40 minutes, keeping them as dry and fluffy as possible.

- 04
Step 4
Place the mung bean paste on a cutting board and roll it out with a rolling pin, or blend it into a mung bean paste using a food processor, keeping it as dry and loose as possible.

- 05
Step 5
Sift the mung bean paste. This process is a bit tedious; you can skip this step if you don't mind eating small lumps.

- 06
Step 6
The sifted mung bean paste is very smooth.

- 07
Step 7
Pour corn oil into a pan and turn on low heat.

- 08
Step 8
Heat oil to 7 % hot, then add the mung bean paste and stir-fry until all the moisture has evaporated. Remove from heat and mix in sugar and honey.

- 09
Step 9
Divide the mung bean paste into your desired size and press out patterns using a mooncake mold. I made 4 , using a 50 mold.
