Step 1
Cut the duck into pieces, blanch it, and rinse it with tap water to remove the blood and dry it.

Step 2
Cook arrowhead in water used to fry ducks, peel off the outer skin, and cut in half.

- 03
Step 3
Mince the garlic, onion, and ginger, and place all the ingredients in a container.

- 04
Step 4
Mix oyster sauce, hoisin sauce, fermented red bean curd, light soy sauce, sugar, and chicken powder to make a sauce.

- 05
Step 5
Heat oil in a pan, add star anise and sauté until fragrant. Add diced onion, ginger, and garlic and sauté until fragrant. Add duck pieces and sauté until slightly browned. Splash in cooking wine, stir-fry a few times, then add the prepared sauce and stir-fry until fragrant.

- 06
Step 6
Add water, just enough to cover the duck pieces, bring to a boil over high heat, then transfer to a casserole dish and simmer over low heat for 30 minutes. Test the duck pieces by inserting chopsticks; if they easily pierce through, the duck is tender enough. Add the arrowhead, reduce the sauce over high heat, and finally garnish with red bell pepper slices and scallion segments.
