Method
- 01
Step 1
Remove the leaves and stems from dried locust flowers, soak them in water and wash them clean. Fresh locust flowers can also be used; add salt to dehydrate them.

- 02
Step 2
Sifting flour

- 03
Step 3
Crack in the eggs and stir in one direction.

- 04
Step 4
Add milk and stir to form a thin batter. The batter can be quite thin; it will thicken after adding the locust flowers. Stir in one direction only.

- 05
Step 5
Add sugar to the mixed batter and continue mixing until smooth.

- 06
Step 6
Add the cleaned and squeezed-dry locust flowers.

- 07
Step 7
After mixing well, the batter should be of a suitable thickness. If it's still too thick, you can add more milk to adjust it.

- 08
Step 8
This isn't an advertisement; I've gotten used to using this bear-shaped egg pan. It has automatic temperature control so it doesn't overheat, and the pancakes are all the same size, so I don't have to worry about them not being perfectly round or looking bad. Other similar non-stick pans can also be used as substitutes.

- 09
Step 9
Pour in an appropriate amount of batter and spread it evenly, then wait to flip it over.

- 10
Step 10
Add a little oil when flipping the dough; an oil brush is best. (Ignore the picture.) Too much oil, just a tiny bit.

- 11
Step 11
Pan-fry until cooked through on both sides and serve.
