Scallion oil noodles
How to make scallion oil noodles (with pictures and 11 steps). Ingredients: eggs, diced ham, egg noodles, scallions.

Method
- 01
Step 1
Prepare the ingredients: eggs, diced ham, egg noodles, scallions.

- 02
Step 2
Prepare a bowl, pour in two teaspoons of light soy sauce, one teaspoon of dark soy sauce, and two teaspoons of white sugar, stir, and set aside.

- 03
Step 3
Cut the ham into strips (my knife skills aren't great ∑(゚ω゚∪) please forgive me), and cut the scallions into small sections.

- 04
Step 4
Beat the eggs, heat a pan, add cooking oil, and scramble until cooked. Stir-fry the ham until golden brown on both sides, then set aside.

- 05
Step 5
Heat oil in a pan, add chopped scallions, and simmer over low heat until golden brown. Remove and set aside. Note: They should have a slightly yellowish-green tinge. Turn off the heat at this point; simmering any longer will cause them to burn.

- 06
Step 6
Wash the pot and add a little water (to coat the pot). Then pour in dark soy sauce, light soy sauce, and white sugar. Cook until the sugar dissolves and the pot boils. Turn off the heat and let it cool slightly. Pour the previously prepared scallion oil into the pot.

- 07
Step 7
Mix well to make the finished scallion oil.

- 08
Step 8
In a separate pot, bring water to a boil, then add the egg noodles and cook until soft.

- 09
Step 9
Quickly remove from the water and place in a bowl. Drizzle with seasonings and scallion oil, mix well, and it's ready to eat.

- 10
Step 10
Immediately after cooking, add scallion oil and stir; otherwise, the noodles will clump together. Then, place the ham and egg in a bowl.
