Original Juice Aspic
Original recipe for pork skin jelly, with 15 steps. Wash the pork skin thoroughly and blanch it in cold water.

Method
- 01
Step 1
Wash the pig skin clean and blanch it in cold water.

- 02
Step 2
Once the water boils and the pig skin changes color, curling it up will keep it warm.

- 03
Step 3
Remove the pig skin from the pot and scrape off the fat. It's easier to scrape it off right after it cools down, as it becomes harder to scrape off once it's cooled.

- 04
Step 4
Cut the pork skin into strips and wash it repeatedly in warm water with salt 4 to 5 times (to remove the oil).

- 05
Step 5
Place the cleaned pork skin in a clay pot with about 3 times the amount of cold water, add ginger slices, salt, and a spice packet containing star anise, Sichuan peppercorns, and bay leaves.

- 06
Step 6
Bring to a boil over high heat, then reduce to a simmer and cook for 2 hours.

- 07
Step 7
Add the cooked pork skin soup to the blender.

- 08
Step 8
Stir into a thin paste

- 09
Step 9
Blanch the green peas and carrots beforehand, then sprinkle them into the mold.

- 10
Step 10
Pour the liquid pig skin into the mold bowl.

- 11
Step 11
After letting it cool naturally, refrigerate for 2 hours before setting.

- 12
Step 12
Cut into small pieces; you can eat it directly or use it in a cold salad.

- 13
Step 13
Sauce: light soy sauce, sesame oil, chopped chili peppers, sugar, rice vinegar, and chopped cilantro.

- 14
Step 14
You can pour it directly over the top, or eat it on its own!

- 15
Step 15
The original flavor aspic is ready!
