How to make iron plate egg pancake?

1. Grab two handfuls of noodles and put them in a large bowl or basin, add appropriate amount of water to make a paste. (The viscosity of the paste should be such that when you pick up the noodles with chopsticks, the noodles will not hang on the chopsticks for a long time, usually 1 or 2 centimeters will drip down, which is moderate, or it can be slightly thicker).

2. The batter must be beaten evenly without any dry flour.

Turn on the gas stove, put a wok (or frying pan) on it, adjust the heat to medium to slightly lower, put a small spoonful of oil (the rice spoon used for eating), heat it until you reach your hand over the pot (25-30 cm above the bottom of the pot; if it is a wok, 5-10 cm above the edge of the pot), and when your hand feels a little hot, the temperature is just right, then spread the oil around the pot.
