How to make braised pig skin

1. Wash the pig's scalp and put it in a pot. Put an appropriate amount of water in the pot, then add star anise, cinnamon, mushrooms, tangerine peel, fennel, cooking wine and ginger. Bring to a boil over high heat, then reduce to medium heat and simmer for 20 minutes. Reduce heat to low until meat is tender. (It doesn’t need to be cooked too much, the remaining sauce can be sealed and refrigerated for next use)

2.12 Take out the cooked meat and cut it into large pieces. Add a little oil to the wok, then fry the meat on all sides.

6. Then put the meat in and stir-fry over high heat to force the oil out of the meat.

7. When the oil is almost released, add appropriate amount of salt, light soy sauce and a few drops of dark soy sauce, or add a few grains of white sugar. After stir-frying evenly, add the green part of the garlic sprouts into the pan and stir-fry evenly.

8. This pig face tastes very fragrant, not oily or greasy, and is very delicious. Or you can give it a try. If you don’t like stir-frying, you can also eat it cold, the taste is different and delicious.
