Ingredients

900g cabbage, auxiliary ingredients, shallots, onions, 1 spoon of minced garlic, 4 spoons of coarse salt, 3-5 spoons of chili powder, 5 spoons of fish sauce, 1 spoon of sugar, 1/3 spoon of ginger powder or ginger paste, half a medium-sized onion, 2 shallots

1. Remove the roots of the cabbage and cut into slices.

2. Add 4 spoons of coarse salt to half a bowl of water and stir slowly until it dissolves. It is best to dissolve it completely so that the flavor is more evenly absorbed.

3. Add salt water to the chopped cabbage, mix well and marinate for 1 and a half hours.

4. During this time, prepare the green onions, onions, minced garlic, and pickled cabbage. Rinse them twice with clean water and drain them for about 20 minutes.

5. After draining the water, add chili powder, fish sauce, minced garlic, sugar, and ginger powder, and mix well wearing disposable gloves.

6. After the seasoning is mixed, add the scallions and onions and mix them patiently. After mixing, leave them at room temperature for half a day and then put them in the refrigerator.
