How to make nine-layer pepper and green onion soft pancake

The method of making nine-layer pepper and scallion soft pancake is easy, and the ingredients used in this dish are rich in nutrients.

1. Pile the flour on the silicone chopping board, dig a hole in the middle and put some salt in it;

2. Knead the dough with boiling water. Pour water while using a spatula to stir and knead the flour and water to maximize the fusion. Do not add water when there is no obvious dry powder. After adding appropriate amount, use your hands to shape it into dough. The dough must be soft. After kneading repeatedly, cover with film and let it relax for 30 minutes. (I left it overnight, and it doesn’t need to be refrigerated in the room temperature in Northeast China)

3. Start making pancakes the next morning: apply oil on the chopping board, take a piece of dough, roll it into a square thin slice, evenly apply a layer of vegetable oil on it, sprinkle some salt (if you think the salt added when kneading the dough is enough, then don't sprinkle more salt), appropriate amount of pepper powder, chopped green onion and chopped coriander;

4. If shown, cut two cuts at one-third of the sides of the dough;

5. Start from the bottom and fold left and right respectively;

6. Fold upwards again and press it slightly to release the gas inside;

7. Fold it left and right again, and press it down slightly;

8. Fold upwards again, still pressing slightly;

9. The last step is to fold it left and right, press it firmly, and expel the gas inside;

10. Let it rest for 20-30 minutes, then roll it into a thin square pancake. This is the dough for the nine-layer pancake.

11. Heat the pan, add oil, put in the dough, and start baking;

12. Fry the dough on one side until it is browned and cooked, then turn it over and fry the other side;

13. The other side is also baked;

14. Serve on a plate;

15. You can cut it and share it;

16. Thin layers, soft texture, rich aroma of pepper and onion, it is delicious!

Although restaurants provide us with convenience, they still have many shortcomings. It is better to make it ourselves. Nine-layer pepper and scallion soft pancake is easy to make, nutritious and healthy.
