Tianjin's Jianbing is a well-known snack. Tianjin's Jianbing contains thin crispy crust, which tastes crispy and delicious. The method of making it is also relatively simple. Ingredients (recipe): 150 grams of flour, 20 ml of cooking oil, 3 ml of baking powder, 2 ml of salt, and about 75 ml of water.

1. Preparation of salt soda water: Prepare a clean small bowl, put 1/4 teaspoon of salt, 1/8 teaspoon of baking soda, and then 1/8 teaspoon of aluminum-free baking powder. Pour in an appropriate amount of warm water. Use chopsticks to stir the water and powder evenly to form salt soda water.

2. Mixing and folding the dough: Put 150 grams of flour in a mixing bowl and pour in the prepared salt and soda water in batches. Use chopsticks to mix the salt and soda water with the flour evenly to form snowflake-shaped dough. Knead the dough together with your hands to form a smooth dough, cover with a wet cloth and set aside. Sugar for 20 minutes. Brush a layer of cooking oil on the chopping board. Put the sugared dough on the chopping board and press it into a round cake with your hands.

Use a rolling pin to roll out the round dough into a rectangular dough sheet. Lift the left and right sides of the rectangular dough sheet upwards and fold it back to the middle. Fold the folded dough sheet back to the middle seam to form a long strip of folded dough sheet. Lift the upper and lower sides of the long strip of folded dough sheet upwards and fold it back to the middle. Fold the folded dough sheet back to the middle seam to form a round mound-shaped folded dough sheet. Brush a layer of cooking oil on the surface of the round mound-shaped folded dough sheet, wrap it with plastic wrap and refrigerate it overnight.

3. Preparation of the crispy dough: The next morning, take out the dough that has been sugared, put it in the base of your right hand, press the thumb of your left hand on the center of the dough, and press the other four fingers on the back of the dough. Move the dough in a circular motion to rotate it in the base of your right hand so that the edge of the dough becomes smooth. Use a knife to divide the dough into 2 equal parts, take one of the parts, roll it out with a rolling pin, and make it thin into a thin rectangular dough sheet. Use a knife to divide the rectangular dough sheet into 3 equal parts. In the middle of each dough sheet, use the tip of the knife to gently make a few small cuts, and be careful not to cut the edge of the dough sheet when separating.

4. Put a proper amount of cooking oil in the iron pan for frying the crackers , heat it over high heat until it is 80% hot, hold a dough piece above the pan, dip it in the pan, lift it up so that it is above the pan, dip it in the pan again, put all the dough pieces in the pan, and fry until both sides are golden brown.

Tip: You can add some baking soda, but I didn’t. The amount of clean water can be adjusted appropriately. The dough should be rolled as thin as possible so that it will be crispy when fried. It can be rolled again after being cut into small pieces. The shape and size don’t matter, you’re going to eat it at home anyway, so if the pieces are small, put a few more in. Because baking powder is added when frying, small lumps will appear.
