How to make sponge cake (square Thousand Leaf pattern)

1. Mix the whole egg liquid with fine sugar and honey evenly, and heat it in a hot water basin to 36-40℃. The egg liquid is best beaten at this temperature.

2. Add butter, milk and appropriate amount of vanilla extract to a hot water basin until the butter melts, keeping the temperature at around 40°C.

3. Beat the whole egg liquid at high speed until it turns white. It takes about 10 minutes to beat the egg liquid until it can be drawn into a texture without disappearing immediately. Do not over-beat.

4. Sieve in the low-gluten flour and stir until there is no dry powder. Use a spatula to drain the butter and milk mixture (do not pour it in one place) onto the batter. Stir evenly by stirring for about 100 times until the batter can fall continuously along the scraper when the scraper is lifted.

5. Put a small portion of the batter into a small bowl, add a small spoonful of matcha powder, stir evenly, and put it into the piping bag.

6. Pour the batter into the mold and drop it vertically from a height of about 10 cm to eliminate large bubbles in the batter.

7. Squeeze the matcha batter on the surface of the batter in a parallel ∥ manner, and use a toothpick to draw perpendicularly along this line to form a thousand-leaf pattern.

8. Put it into the preheated oven at 150 degrees for 55 minutes. The temperature and time of each oven are different, so the principle is not to exceed 160 degrees.

9. After taking out of the pan, turn the mold upside down to let it cool. My mold is non-stick. If yours is not, I suggest you put greaseproof paper around and on the bottom. After taking out of the pan, remove from the mold, tear off the greaseproof paper, turn the mold upside down to let it cool for 6 minutes, then turn it over to avoid the cake texture being loose on the top and tight on the bottom. After cooling, you can cut into pieces and store
