Homemade simple grilled chicken wings recipe

1. Wash the chicken wings and cut a few cuts on both sides so that they can be easily flavored when marinating.

2.1 Marinating: Take out the soaked chicken wings, put them in a bowl, add dark soy sauce (for color), light soy sauce (saltier, usually used for seasoning and enhancing flavor when cooking), salt, oyster sauce, sugar (since there is no honey at home, white sugar is used instead to make the roasted chicken wings brighter in color, a bit like sugar coloring), white pepper powder (to remove fishy smell and enhance flavor), cooking wine (white wine is also fine, high-proof white wine tastes better), garlic chili sauce (omit if you don’t like spicy food), minced garlic, and it’s best to add some freshly squeezed lemon juice (to make the meat more tender and smooth).

3.2 Soak the chicken wings in scallion and ginger water and add some salt! If you like stronger flavors, you can add spices such as peppercorns, aniseed, and cumin to soak it together. The soaking time is about 2 hours. The purpose is to allow the blood in the meat to seep out and let the flavor of the seasoning penetrate into the meat. The meat treated in this way will have no meaty smell and will be tender and juicy after roasting!

4. After mixing well, it will look like this. It is best to leave the chicken wings in the refrigerator for 12 hours before baking to allow them to fully absorb the flavor!

5. It’s ready to bake in the oven! Set the oven to 250 degrees, upper and lower fire, preheat for 5 minutes and then put the baking tray in! It is best to put cooking paper on the baking tray to make it easier to turn over and prevent the skin from sticking (placing it directly on the baking tray or using aluminum foil will cause it to stick). Turn it over after about 10 minutes, and at the same time, use a brush to apply the remaining sauce from the marinade on the chicken wings, and then bake for about 10 minutes. After that, repeat the above steps and the time will be reduced to about 5 minutes! Tip: The time may vary depending on the oven power, so please decide according to your own circumstances!
