1. Boil pepper water first, add appropriate amount of pepper to 200ml of water

2. Boil and let cool for later use

3. 500g pork filling, add chopped green onion, ginger, soy sauce, salt, chicken essence, mix well

4. Slowly add the pepper water to the prepared meat filling, three times. Stir thoroughly each time, and stir in a clockwise direction until the meat filling fully absorbs the water. After adding the pepper water, continue to stir in one direction quickly until the meat filling becomes sticky and difficult to handle.

5. At this point, the meat filling is ready. (I made a lot at a time, so I only took a portion to add water chestnuts to make wontons, and the rest was packaged and frozen for use.)

6. Peel the fresh water chestnuts and blanch them in boiling water for a few minutes, cool them down and chop them into small pieces.

7. Take a portion of the minced meat and add the chopped water chestnuts and mix well. The ratio of minced meat to chopped water chestnuts is 2:1 or 1.5.

8. Fill the narrow end of the wonton with an appropriate amount of meat filling

9. Fold from outside to inside

10. Turn it over, apply water on both ends of the wonton, and glue the two ends together.
