1. Wash the small yellow eel

2. Boil in cold water. When bubbles start to appear around the pot and the eel opens its mouth slightly, you can turn off the heat. Note that this step is the key to separating the eel meat from the bones. Do not overcook it, otherwise the bones will break easily when separating the eel. Too much rawness will make it difficult to separate the eels.

3. After the eels are scalded, remove from heat and immediately soak them in cold water.

5. Heat oil in a pan until it is 70% cooked.

6. Pour in the shredded eel, add salt, small red pepper, cooking wine and soy sauce and stir-fry. This step requires frying for a little longer to make the eel shreds turn golden brown.

7. Now you can wash the green vegetables and chives.

8. Chop the green vegetables and set aside.

9. After the eel shreds are fried until golden, add the chopped green vegetables and stir fry.

10. After the green vegetables are fried until wilted, add appropriate amount of water.

11. Cut the chives into sections.

12.Put them in a pot and bring to a boil.

13. Soak the cornstarch in cold water and set aside.

14. When the pot boils, add MSG and taste it. It is so delicious. Haha.

15. Slowly pour the starch into the pot, stirring as you pour, until it becomes a soup. You can now serve it.

16. Sprinkle with pepper, sesame oil and chopped green onions and you can start eating.
