Method 1:

4. Put the sliced ​​eggplant in the batter and coat it with a layer of batter. Use chopsticks to pick it up and fry it in the hot oil pan.

Method 2:

1. Let the dough rest first. Wash and peel the eggplants. Because eggplant skin tends to turn black, the color looks better after peeling. But eating it with the skin will be more nutritious.

2. Wash and dice the pork, then add soy sauce to make it taste more delicious.

3. Chop the eggplant into small pieces, add salt and water, and squeeze dry. Stir-fry the diced meat in twice the amount of oil than when stir-frying vegetables, then pour into the eggplant and mix well.

4. When the dough has risen, it should be kneaded in one direction, rolled into thin strips and cut into pieces.

5. Sprinkle with dry flour and dry into dough. Sprinkle salt on the dumpling filling, mix well and then start wrapping.

6. When you are almost done wrapping, you can boil water. While waiting for the water to boil, wrap the last few. When frying dumplings, you must wait for the water to boil and stir the water clockwise to make it swirl. Cover the lid and cook the skin, and open the lid to cook the filling. The meat is half cooked and just needs to be boiled. Take it out and shake it on a plate, it won't stick.

The eggplant filling is a bit chewy and is delicious when paired with mashed garlic or sesame oil and vinegar.

You can also fry some eggs first, chop them into small pieces, mix them with the drained eggplant cubes, and fry them for one minute! It tastes good with some tofu.
