Ingredients: Chicken

Seasoning: salad oil, salt, onion, ginger, garlic, cooking wine, soy sauce, sugar, coriander

1. Wash and chop half a chicken into small pieces, add salt and cooking wine and marinate for 20 minutes. Heat oil in a frying pan, fry over low heat until both sides are slightly browned, set aside;

2. Heat oil and sauté ingredients (cut green and red peppers into diagonal circles, sliced ​​ginger, sliced ​​garlic, shallots, and scallion whites into diagonal sections), then add fried chicken and stir-fry for a while;

3. Add light soy sauce, sugar and a small amount of water, cover and simmer for 5-8 minutes. Sprinkle with coriander before serving and serve.

Method 2

Main ingredients: Free range chicken

Accessories: garlic, ginger, red pepper, green onion, coriander, dried red pepper, salt, vegetable oil, soy sauce, peppercorns[1]

1. Kill the free-range chickens, clean them and chop them into small pieces. The chicken for dry stir-frying should be chopped into smaller pieces so that it can be more flavorful. The meat of free-range chickens is dark red and firm;

2. Pour clean water into the cooking pot, add the chopped chicken pieces, and boil over low heat to blanch them. After cooking for 10 minutes, remove the chicken, drain and let cool for later use;

3. Wash the dried red peppers, soak them in clean water, and cut them into large sections;

4. Peel the garlic cloves and crush them with a knife;

5. Wash the coriander and red pepper, peel the garlic, and cut the green onion into sections for later use. Slice the ginger, wash and cut the fresh red pepper into small pieces;

6. Pour vegetable oil into the wok. The amount of oil should be slightly more than that for normal cooking, about two tablespoons. Add the sliced ​​ginger and fry until fragrant.

7. Pour in the chicken pieces and stir-fry over low heat until the chicken is golden brown and the edges are slightly burnt;

8. Turn off the heat, cover the pot and simmer for 10 minutes;

9. Take out the chicken, leave some oil in the pan, add the chili pepper and green onion, and stir-fry over low heat until the green onion turns slightly yellow;

10. Pour in the chicken pieces and dried red pepper segments and stir-fry over low heat;

11. Sprinkle in fine salt, add 1/3 tablespoon of soy sauce, stir well, sprinkle in garlic cloves, stir-fry slightly, turn off the heat, sprinkle in coriander, and serve.
