How to make steamed eggplant with mashed garlic

The method of steaming eggplant with mashed garlic is very simple and the ingredients are also convenient to purchase.

1. Wash the eggplant with salt, cut off the irregular head and tail, and cut into two pieces.

2. Then cut all the eggplants into small strips.

3. Arrange the cut eggplants on a plate.

4. Boil water in a pot, put in the eggplants, and steam them for 10 minutes (steam them for a few minutes longer if the quantity is large).

5. Crush the garlic into a paste, cut the chili pepper into small pieces, and chop the coriander for later use.

6. Take out the steamed eggplant and let it cool for later use.

7. Pour appropriate amount of oil into the pot.

8. Add garlic and chili pepper and sauté until fragrant.

9. Then add sugar, white pepper and light soy sauce.

10. Stir-fry until fragrant.

11. Then pour the water from the steamed eggplant plate into the dish.

12. Add salt.

13. Add a little aged vinegar.

14. If there is too much soup, turn up the heat to reduce the juice.

15. After turning off the heat, drizzle a little sesame oil.

16. Place the chopped coriander on the eggplant.

17. Pour the sauce on the eggplant and sprinkle with cooked white sesame seeds.

18. Let’s eat it. It’s really delicious.
