As we all know, Purslane has high medicinal value. The leaves of Purslane are like small beans. They are tender green when they first grow out, and the color becomes darker as they grow larger. The flowers of Purslane have several colors, red, pink, and yellow. The flowers of Purslane usually bloom at noon when the sun is just right. They are colorful and are also a beautiful landscape. So do you eat such beautiful little flowers?

Purslane can be eaten even if it has flowers, but the taste is not good! If it blooms but the branches and leaves are thick, it is still delicious. However, if it starts to produce seeds in the late stage of flowering, it is generally worse. As long as you remove its flowers and seeds, Purslane will not get old. After blanching, it can be served cold or made into dumplings. Purslane is not only a medicinal herb, but also a delicacy.

Serve cold and eat while fresh. Wash the lettuce and blanch it in boiling water. Take it out and soak it in cold water. Then squeeze out the water, put it in a plate, add mashed garlic, a little salt, sesame oil, and MSG, and mix well.

Eat pancakes. After washing and blanching the lettuce, take it out and let it cool, put it in a bowl, add appropriate amount of flour and salt, then put in an egg and appropriate amount of chopped green onion, mix into a paste and set aside. Put a little peanut oil in a frying pan, wait until the oil is warm, add the mixed batter, fry one side until it is set, then turn over and fry the other side until cooked through.

Made into dried vegetables. In summer and autumn, when Purslane is most abundant, pick some and take them home, stir-fry them in boiling water, and then dry them in the sun. In winter or during the Spring Festival, soak the dried purslane, chop it up, add meat filling, a little leek (for flavor), salt, sesame oil, and wrap it into large steamed buns. The taste of dried vegetables is more special, and they are also beautiful and delicious. Eating them during the Spring Festival can also bring good luck. Horse lettuce means wealth and fortune! I prepared a lot of dried horse lettuce this year. During the Spring Festival, I gave them to my sisters and asked them to use this wild vegetable to make big steamed buns and eat them for good luck.

Make soup. Make soup with purslane and shredded pork, and sprinkle with egg drops before serving.

Stir-fry and eat. Purslane can be stir-fried with shredded pork or scrambled eggs.

Purslane is widely distributed and has strong vitality. It often grows wild on ridges, ditches, roadsides and various dry lands. In spring and summer, Purslane thrives and its stems and leaves are most luxuriant. It is easy to pick in the fields, especially on ridges and roadsides. In recent years, with the increase in people's consumption, it has begun to turn to artificial cultivation.
