Fried Pumpkin Pancakes

In a busy life, it is a great happiness to be able to have a delicious meal when you return home. If you don’t have much time to prepare dinner, you can choose simple ingredients, stir-fry them briefly and you’re done. Fried pumpkin pancakes are that easy to make.

1. Slice the pumpkin, steam it and mash it into puree.

2. Add glutinous rice flour, sugar and baking powder.

3. Knead into smooth dough.

4. Divide into small portions of normal size.

5. Roll the small dough into a ball, flatten it, and coat both sides with breadcrumbs.

6. Fry in oil until both sides are golden brown. (No one helped take pictures, so I threw a pancake in there to try it out. After trying it, I knew what the right temperature should be. My first pancake was burnt...)
