How to make Shanghai scallion pork ribs

When it comes to making Shanghai scallion pork chop noodles, I believe many people have no idea where to start. This is a mouth-watering dish that requires two raw materials: chicken and vegetables. The chef's superb cooking skills make the delicacy even more attractive. This is also a health-preserving recipe that can be made often for the elders at home.

1. It is best to have fat on the pork chops, as slightly fatter ones will make them more tender and fragrant.

2. First, cut the outer fat part into several sections, otherwise the fat will shrink when exposed to heat, causing the entire pork chops to deform.

3. Next, use the back of a knife to loosen the meat on the chops, crisscrossing both sides.

4. Cut the ginger into thicker strips. Take a bowl of suitable size, put in 15 grams of light soy sauce, sugar, cooking wine and ginger strips, and beat in 1 egg.

5. Rub with your hands until the juice is basically absorbed by the pork chops. The chops that have been fully kneaded in this way will be more tender and do not need to be cooked for too long.

6. Add 10 grams of dark soy sauce, cornstarch and appropriate amount of salt. Dark soy sauce is mainly used for coloring, and salt can be added or not according to personal taste.

7. Mix well and marinate for more than 20 minutes. The longer the time, the better the flavor.

8. Heat the oil in a pan over high heat and fry the marinated pork chops. Fry each side for ten seconds.

9. Fry the shallots until fragrant and spread them on the base.

10. Place the fried pork chops on top of the green onions.

11. Add rock sugar and the remaining light soy sauce, dark soy sauce and the remaining soup from the marinated pork ribs.

12. Add water to slightly cover the ribs, bring to a boil over high heat, cover, then turn to medium heat and cook for seven or eight minutes, the ribs are ready.

13. Machine-made noodles are the best choice, but dried noodles are also acceptable.

14. Boil a large pot of water and add appropriate amount of salt to cook the noodles. Briefly blanch the vegetables in noodle soup.

15. While cooking the noodles, use some of the broth from cooking the pork ribs and an appropriate amount of fresh soup or boiling water, and add some chopped green onions to prepare the base soup.

16. Add the noodles, top with pork chops, vegetables and braised eggs, sprinkle with some chopped green onions and serve.
