How to make potato and eggplant noodles

1. Ingredients for flour: put flour, an egg and salt in a bowl.

7. Add the diced potatoes and eggplant and stir-fry.

8. Add soy sauce, cooking wine, sugar, and salt, and stir-fry until soup comes out. (Because the tomatoes I used are relatively large and juicy, no need to add water), cover the pot, simmer on low heat until the soup thickens and the dish is cooked, turn off the heat, add a little sesame oil and MSG, and stir evenly.

9. Prepare the diced potato and eggplant stew.

10.1 Fold the dough and sprinkle flour between them to prevent them from sticking.

11.2 After the dough is sugared, roll it into large round pieces.

12. Cut into noodles of required width.

13. Shake the pieces after cutting to prevent them from sticking.

14. Bring water to a boil and cook the noodles. Add cold water twice when the water boils and cook until there is no hard core in the middle.

15. After cooking, scoop out with a strainer and rinse with cold water.

16. Drain and place in a bowl.

17. Pour the sauce on top and sprinkle with coriander. In the hot summer, a bowl of cool and refreshing diced eggplant noodles is really delicious.
