How to make purple sweet potato rose rolls

1. Steam the purple sweet potato and mash it into a paste. Squeeze the spinach and set aside.

2. Add sugar and yeast powder to 500 grams of flour and mix well. Take 350 grams of flour, add appropriate amount of purple sweet potato puree and warm water to make a smooth dough. Take 150 grams of flour and appropriate amount of spinach juice to knead into a smooth dough.

3. Cover with a transparent lid or plastic wrap and let it ferment until it doubles in size. (The fermentation time can be increased or decreased according to the temperature at that time)

4. Sprinkle dry flour on the chopping board, take out the fermented purple sweet potato dough, knead it repeatedly to release the air, finally roll it into long strips and cut it into small even pieces.

5. Roll into a round shape.

6. Take 6 small doughs and roll them into round slices. Cut 2 of them in half and stack the 4 slices in sequence. Apply dry flour between each slice and use chopsticks to press a mark in the middle.

7. Roll up from the bottom.

12. Apply some water to the leaves and dip them on the bottom of the rose. Apply 4 leaves to one rose. After everything is done, let it rise for about 10 minutes. (The proofing time will be determined according to the expansion of the roses, but it should not be too long)

13. Add enough water to the steamer and bring to a boil over high heat. Steam the food for 15 minutes, then turn off the heat and steam for 5 minutes.
