How to make fried pancakes

Ingredients: flour, dry yeast, sugar, warm water, edible alkali

practice:

1. Add dry yeast and sugar into flour and mix well;

2. Pour in water and stir with chopsticks while pouring to turn the flour into flocs, then knead it into a smooth dough. The dough you just kneaded may not be very smooth, it doesn’t matter, just cover it with sugar for 10 minutes so that the water can fully penetrate into the dough, and it will become smooth when you knead it again;

3. Cover the kneaded dough and place it in a warm place to ferment until the dough is full of honeycombs;

4. In order to make the noodles fragrant, I dissolved 10 grams of edible alkali with a little warm water and added it to the fermented noodles (because the noodles are fermented with yeast, alkali is not needed);

5. Knead the dough with alkali water by kneading it with your fist to make the alkali uniform (the color should be uniform, not yellow and white). To check whether the amount of alkali is appropriate, just take off a small piece of dough and smell it. If there is no sour smell but only flour fragrance, it is appropriate. If you are not sure, you can skip the process of adding alkali.

6. Fry the kneaded dough for another 10 minutes. The dough is very soft at this time (the fried cakes are delicious when they are soft);

7. Pour a large amount of oil into the pan and heat it to 70% hot (make sure to add more oil). You can test the oil temperature by throwing a small piece of noodles into the oil. If it floats to the surface of the oil immediately, it means the oil temperature is just right.

8. Knead the dough into 30g pieces and gently roll them into balls (do not use flour as filling dough. You can apply a little oil on your hands and the panel to prevent sticking. If you use filling dough, the fried pancakes will become turbid);

9. Use a rolling pin to roll the dough into an oval-shaped pancake. It doesn’t need to be too thin, about 1 cm thick. Make two vertical cuts in the middle.

10. Pick up the dough with both hands and gently pull it (it will be longer and thinner) and put it into the oil pan. It will float up immediately. Then fry both sides with medium heat until golden brown. Be sure to turn it over.

11. It is best for two people to fry the pancakes. One person makes the pancakes and puts them in the pan, while the other one uses long chopsticks to turn them over and watch them fry. You can put three pancakes in the pan at a time. Because they are not put in at the same time, they will be cooked in different order, so you must pay attention to observation.

12. Place the fried pancakes vertically in a container. This will help to control the excess oil inside. They can be refrigerated or frozen and can be stored for a long time. Steam them when eating.
