Vegetarian Fried Noodles

Ingredients: 500g of finished noodles, 3 cabbage leaves, 2 spinach leaves, 2 eggs, 1 green onion, 3 cloves of garlic, dark soy sauce, vinegar, pepper powder, ginger powder, salt, vegetable oil

1. Shred the cabbage, cut the spinach and green onion into sections, and mash the garlic.

2. Boil water in a pot and add noodles.

3. When the noodles are 80% cooked, take them out and put them in a basin of cold water.

4. Heat vegetable oil in another pot and pour in the beaten egg liquid.

5. Remove the fried eggs from the pan and use the remaining oil to stir-fry the cabbage, spinach and onions.

6. After the vegetables are cooked, add egg cubes, pepper powder, ginger powder and salt.

7. Take out the noodles, drain the water and put them into the dish.

8. Stir-fry the vegetables and noodles, put the minced garlic into the bottom of the pot, add appropriate amount of dark soy sauce, and stir-fry evenly.

9. Finally, add vinegar, turn off the heat, stir evenly and serve.

10. I cut a piece of ham and put it in the pot before serving that day. It tasted pretty good. Tips 1: Rinse the noodles after they are cooked. This is a must, otherwise the noodles will become sticky and will not taste good or look good.

2. Many vegetables can be stir-fried, which are nutritious and delicious.

3. Garlic can actually be cut into slices and stir-fried with the vegetables, but the garlic flavor will be greatly reduced.

4. Dark soy sauce is used for coloring. If you like spicy food, you can add a spoonful of chili powder or green pepper.

5. Noodles are not easy to digest, so it is generally better to eat them at noon.
