Braised Chicken Rice That Doesn't Quite Like Braised Chicken
A recipe for braised chicken rice that doesn't quite resemble regular braised chicken, with 8 steps in total. Cut the chicken into pieces, put it in a pot of cold water, and skim off the foam after the water boils. Remove the chicken (don't blanch it for too long, or the meat will become tough), and rinse off the foam.

Step 1
Cut the chicken into pieces, put them in a pot of cold water, and skim off the foam after the water boils. Then remove the chicken (don't blanch it for too long, or the meat will become tough), and rinse off the foam.

Step 2
Prepare the ingredients: potatoes cut into chunks, green and red bell peppers, shredded ginger, and sliced garlic.

- 03
Step 3
Add some finely chopped green chilies (very spicy) and small pieces of dried chilies.

- 04
Step 4
Heat oil in a pan, add a few rock sugar pieces and stir until melted. Then add chicken and stir-fry until coated with the caramelized sugar. Add chili powder, soy sauce, cooking wine, dried chilies, ginger slices, and garlic slices. Stir-fry 5 to 10 minutes (the pan was too hot, I forgot to take a picture). Add water to the pan and simmer for a while. Add chopped potatoes and continue to simmer. (Because there are many people in my family, the pan was too small after adding the ingredients, so I transferred it to a larger pot to continue simmering).

Step 5
When the potatoes are almost cooked, add the chopped yam pieces.

- 06
Step 6
Continue simmering, and don't reduce the sauce completely at the end; leave some broth to soak rice in—it's so delicious! Oh, I forgot to mention the wood ear mushrooms. Soak and wash them beforehand, and put them in the pot before the potatoes. My family loves wood ear mushrooms, so I added a lot.

Step 7
Let's eat! The broth is at the bottom.

- 08
Step 8
Served with a bowl of fragrant rice and drizzled with broth, it's simply delicious! It's spicy and refreshing with a hint of sweetness. The potato chunks are stewed until soft and tender, the yam is crunchy, and the wood ear mushrooms are flavorful with the broth. It would be even better with some enoki mushrooms, but it doesn't taste quite the same as what you get outside. No problem, though; my sister was still picking at bits of meat in the broth and smacking her lips at the very end! Haha.
