Step 1
First, prepare the ingredients. Wrap the galangal and thirteen-spice powder in gauze (I used a cut-out filter bag). If you don't have galangal, you can omit it.

- 02
Step 2
Tie it up with a rope.

- 03
Step 3
After cleaning the pig ears, cut them in half, blanch them in hot water, and then rinse them again.

Step 4
Place the pig's ears, garlic, chili peppers (I personally like it spicy, so the chili peppers are optional), seasonings, and 6 bowl of soy sauce into a clay pot. Then add water, until the water level is about 8 of the way up the pig's ears.

Step 5
Bring to a boil over high heat, then simmer 5 minutes. Reduce heat to the lowest setting and simmer for about 40 minutes (the time it takes to cook two bowls of King of Glory). Stir the pig ears halfway through cooking. When the broth is reduced to about 7 of a bowl and the pig ears can be easily pierced with chopsticks, remove from heat, slice, and plate. This is how the finished product looks.
