Method
- 01
Step 1
Prepare all ingredients as shown in the picture: cut scallions into sections, slice ginger, mince some garlic, chop green onions, and marinate frog with cooking wine, pepper, ginger slices, green onions, and salt.

- 02
Step 2
Heat oil in a pan, and once it's hot, add the seasonings in the order shown in the picture and stir-fry.

- 03
Step 3
After stir-frying for a few minutes, add scallion segments and continue stir-frying. Stir-frying the base ingredients is crucial; be sure to stir-fry over low heat.

- 04
Step 4
The base ingredients are stir-fried until fragrant, about 10 minutes, then an appropriate amount of boiling water is poured in to simmer.

- 05
Step 5
Simmer the broth for about five minutes to bring out the flavor of the seasonings. You can judge the time yourself; there's no precise time to measure. Then add the loofah and cook until it's done. Remove the loofah and place it at the bottom of a bowl for later use.

- 06
Step 6
Next, put in the marinated frog and cook it over high heat (I'm saying it three times because it's important) until it's thoroughly cooked, about eight minutes.

- 07
Step 7
Then season it by adding appropriate amounts of salt and chicken bouillon powder (I usually don't use MSG).

- 08
Step 8
After seasoning, remove from heat and plate. Then, place chopped green onions and garlic on top (if you prefer a stronger spicy flavor, you can also add dried chili pepper pieces and Sichuan peppercorns).

- 09
Step 9
Heat some oil in a pan and pour it over the chopped scallions and garlic.

- 10
Step 10
Finally, you can serve it and enjoy it at your leisure.
