Minced meat and eggplant
Here's a step-by-step guide to making minced meat and eggplant with a straw raincoat, with 7 steps. Wash the long eggplant and cut it as shown in the picture (cutting method: place a chopstick on each side of the eggplant, cut at a 90 degree angle, then flip it over and cut at a 45 degree angle as shown in the picture). Sprinkle with salt and marinate for about ten minutes.

Step 1
Wash the long eggplant and cut it as shown in the picture below (cutting method: place a chopstick on each side of the eggplant, cut at a 90 degree angle, then flip it over and cut at a 45 degree angle as shown in the picture), then sprinkle with an appropriate amount of salt and marinate for about ten minutes.

Step 2
Mince the meat, add cornstarch, light soy sauce, and salt, mix well, and prepare the other ingredients as shown in the picture.

- 03
Step 3
Heat some oil in a pan until it reaches about 70% of its maximum temperature. Fry the eggplant on both sides until it changes color and softens. Be careful when flipping it to avoid breaking it or scattering it.

Step 4
After frying, spread the eggplant around the edge of the pan, leaving the bottom. In the center, sauté minced chili, scallions, ginger, and garlic until fragrant. Then add minced meat and stir-fry until it changes color. Add water and salt to taste, bring to a boil, and cook until tender and flavorful. Serve on a plate.
