10. Top with Wermut wine. This is the only sweet wine suitable for cooking in my house. There are some sweet liquors, and it would be better if you pour or burn them with liquor.

11. Use a flamethrower to spray the salt layer that has been poured with wine. Don't be afraid, Wermut only has about 10% alcohol, so it won't catch fire. It will only make the flame of the flamethrower bigger. Burn until the surface of the salt layer is dry again.

12. Carefully loosen the salt layer with a hammer or rolling pin and scrape it off with a spoon. Carefully remove the fish. Then remove the skin and bones, leaving only the fish meat.

13. Place the fish on a plate and serve with the prepared tomato vinaigrette.
