How to make simmered eggs

1. For two eggs, make sure you choose fresh eggs, that is, when you open them, the yolk should be yellow and the white should be white, and they are not mixed together. Because stale eggs will stew like egg drop soup made with boiling water.

2. Beat the eggs with two chopsticks. Make sure to beat them thoroughly to mix the egg yolk and egg white completely. Otherwise, the eggs will have particles and the surface will not be smooth. Beat until the egg liquid is uniform in color and bubbles appear on the surface as shown below.

3. Add 1 teaspoon of salt. Eggs eat salt, and putting more will be too salty, so only add a little. A little chicken essence can be added or not, because the eggs themselves are already very fresh. If you don’t like the taste that is too fresh, you can leave it out.

4. Add water. Be careful not to add cold water, as the egg liquid will not be easy to solidify. Do not add boiling water, as it will become egg drop soup. Only add warm water below 40 degrees, and stir while adding until the salt is completely dissolved. At the same time, pay attention to the amount of water added. The ratio of water to egg liquid should be appropriate, with a 1:1 ratio being preferred.
