How to make delicious white radish meat filling

White radish is tender and white in color, and each one looks plump and white. Just one look at it can whet one's appetite. In fact, white radish does have the function of helping food. Not only that, it can also moisten the lungs and regulate qi. It can be said that it is not only beautiful, but also has many benefits to the human body. That’s why there is a saying among the people: “Eat radish in winter and ginger in summer, and you won’t need a doctor to prescribe medicine.” However, there are some taboos to note when eating white radish. People with weak spleen and stomach should eat less radish. So how do you make the white radish and meat filling delicious?

For the pork and radish filling, prepare 500 grams of pork, wash and chop it into small pieces, then add chopped ginger and green onion, then add chicken essence, oil, soy sauce and sesame oil. Use chopsticks to stir evenly in one direction.

Wash, peel and shred the white radish. Then add a spoonful of salt to the shredded radish, stir well and marinate for about 10 minutes. Squeeze out the water from the pickled shredded radish, then add the shredded radish into the minced meat, mix well, and add appropriate amount of salt and oil. Then wrap it in the prepared dumpling skin. Note here: the salt should be added later, and you can make dumplings after the salt is added, so that the dumpling filling will not release too much water.

How to make white radish delicious? Make dumpling fillings during the Spring Festival. There are two main ways to make it: meat filling and vegetarian filling. Use it as a side dish in meat fillings and as the main ingredient in vegetarian fillings.

1. Large meat filling. ①Ingredients : 2 pounds of pork, half fat and half lean, 1 pound of white radish, appropriate amounts of green onion, ginger, salt, sesame oil, and pepper. ② Prepare the filling: chop the meat into puree, chop the radish, onion and ginger separately, put them together in the filling bowl, pour in sesame oil first, mix well, add pepper and salt while mixing, keep stirring in one direction until the filling is firm. ③It’s easy to make and cook dumplings.

 

2. Tofu filling. ①Ingredients : 2 pounds of radish, 1 pound of tofu, appropriate amount of lard, appropriate amount of onion, ginger, salt and sesame oil. ②Prepare the filling: chop all the ingredients separately, put them into the seasoning bowl, add sesame oil first, mix well and then add salt. ③It doesn’t take much to say how to make and boil dumplings. Everyone knows it.

The ratio of various ingredients in the filling is not an absolute proportion. You can increase or decrease the amount according to personal taste. The key points lie in three steps: chopping, stirring, and the order of adding oil and salt. Crush the ingredients. It is best to cut and chop them with a knife instead of using a meat grinder or a melon brush. Knife cutting can keep the material cells intact to the greatest extent, ensuring a good taste and preventing water seepage. When stirring the dumpling stuffing, whether it is meat or vegetarian, always stir it in one direction so that it will become stiff. Add oil first and then salt. This is because after the oil is mixed evenly, it will seal the cell walls that were damaged during the chopping of the materials. Then add salt, the moisture inside has been sealed by the oil and cannot seep out. Another thing to note is that if it is found to be too dry during stirring, add cold boiled water while stirring until it reaches the appropriate thickness. As for seasonings, there is no fixed rule. You can add your favorite flavors according to your taste, such as five-spice powder, thirteen spices, and chicken essence. However, scallion, ginger, salt and sesame oil are basic seasonings and are indispensable.
