How to cook dried preserved vegetables and beans

Friends are made through getting along with each other, and in the process of becoming friends, visiting each other’s homes is naturally inevitable. It would be really "shameful" if you don't have a signature dish. Of course, you don’t have to worry, because today I will teach you all the techniques for making this dish of stir-fried pickled mustard greens.

1. Soak the dried plums in warm water half an hour in advance to make them swell.

2. Tear off the old tendons of the beans, break them, wash them and drain them. (Put it in a ventilated place to dry the moisture or wipe it dry with kitchen paper)

3. Add a proper amount of cooking oil to the pan, heat it over high heat until it is about to boil, then turn to medium-low heat, put the dried green beans into the pan and fry them

4. Remove from the frying pan until the surface is slightly wrinkled, drain the oil and set aside

5. Peel and dice the garlic cloves, cut the dried red peppers, and shred some ginger for later use

6. Add a proper amount of cooking oil to the pan and sauté the ginger, garlic and dried red pepper until fragrant.

7. Then add the fried beans and stir fry for a while

8. Take out the soaked pickled mustard greens, remove the juice, add the pickled mustard greens into the beans and continue to stir-fry

9. Finally, add appropriate amount of soy sauce or hot sauce and stir well.

It is not difficult to understand how to stir-fry pickled mustard greens, but it is not very easy to make it well. This requires our own attention and diligent practice.
